4 Breakfast On-The-Go Recipes You Can Take in the CarÂ
You already know that breakfast is the most important meal of the day. If only there was more time in the morning to actually make and enjoy a healthy breakfast, right? But instead of skipping your first meal or grabbing something from a drive thru, here are four easy, yummy, and healthy breakfasts you can whip you ahead and take in the car.
Yummy Homemade Granola Bar
What you need:
2 cups old-fashioned oatmeal
1 cup sliced almonds
1 cup shredded coconut
1/4 cup flax seeds
3 tablespoons unsalted butter
2/3 cup honey
1/4 cup dark brown sugar
1-1/2 tsp. vanilla extract
1/4 tsp. Â salt
1 cup dried fruit, chopped
Preheat your oven to 325 degrees and grease an 8x12 inch baking dish. It's also a good idea to line it with parchment paper. Toss the oatmeal, almonds, and coconut together on a baking sheet and bake for 10 to 12 minutes. Â Stir occasionally. Transfer the mixture to a large mixing bowl and stir in the flax seeds. Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dried fruit and stir well.
Pour the mixture into the prepared pan and lightly press the mixture evenly into the pan. Bake for 20 to 25 minutes until light golden brown. Cool for at least 2 to 3 hours before cutting. Wrap in individual servings.
Already Prepped Smoothie
What you need:
2 cups frozen berries or fruit chopped, placed in freezer bag, and tossed into the freezer
2 Tbsp. orange juiceÂ
1/2 cup yogurt
1 frozen banana
1 Tbsp. honey
Add all ingredients to your blender and blend until completely smooth. Place in a to go cup with a straw and hit the road.
Breakfast Quesadilla
What you need:
2 flour tortillasÂ
1/2 cup grated sharp cheddar
Thin slices of a Granny Smith apple
Sprinkle a layer of cheese over one tortilla, scatter the apple slices on top of the cheese, and top with the remaining tortilla. Microwave for 30 seconds or until the cheese melts. If you have the time and want a crisper tortilla, place in a hot skillet for 1-2 minutes on both sides. Cut into wedges and serve.
Jazzed Up Yogurt
What you need:
7 oz container Greek yogurtÂ
1 Tbsp. of your kid's favorite jamÂ
1 tsp. honey
2 Tbsp. toasted, chopped almonds
Small handful of berries
